My Philosophy

My aim has been to revisit the Italian gastronomic tradition and revitalize it with a new aesthetic and minimalist values from Danish new cuisine.

My Background

I started out with traditional Italian cuisine in luxury hotels amongst others. Later I got the chance to work with innovative and creative top-line chefs, the finest of whom was Gualtiero Marchesi. Several years working in Scandinavia enriched my experience, where I created some of my most refined dishes, using superb locally-grown ingredients. Today I can offer traditional Italian cuisine which reconciles the Marchesi approach to revisiting with the varied experience of my own  career.

My Approach

In my interpretation of traditional Italian cuisine I aim at a fusion of harmony, taste and aesthetic values, and to share my passion for creating unique dishes carefully suited to the occasion on which they are to be served.
